Ice cream is always a good idea – especially in summer! But what if your frozen treat could be both delicious and support your digestion? Dandelion is more than just a weed – it's a true superherb, packed with bitter compounds, vitamins, and minerals. And yes, it’s amazing in homemade ice cream!
What’s so special about dandelion - the underrated powerhouse?
Dandelion is a true all-rounder in the world of wild herbs. It supports liver function, digestion, and detoxification. Its bitter compounds stimulate bile and stomach activity, making it a great ally for metabolic health.
Usable parts of the plant:
Leaves: in salads, pesto, or smoothies
Flowers: for syrup, jelly, dandelion ice cream, or garnish
Root: dried and used as a coffee substitute or liver tonic
How to integrate dandelion into daily life:
Add a handful of young leaves to your salad or smoothie
Infuse the blossoms in honey or turn them into flower syrup

Recipe Dandelion Ice Cream
Ingredients:
1 handful of fresh, unsprayed dandelion blossoms (just the yellow petals)
1 unpeeled, frozen banana cut into pieces
4 tablespoons of plain yoghurt

Instructions:
gently shake the dandelion flowers to remove bugs or dirt. Do not wash.
put the banana pieces, the dandelion flowers and the yoghurt in a mixer and blend it all together
place the ice cream in a container and put it in the freezer for another hour
enjoy this healthy ice cream :)
